Borsht

Ingredients

1 beetroot per person

1/2 grated onion per person

1 potato per person

Water

Salt to taste

Unsweetened yoghurt

Description

James: I like to eat this and remind myself that my ancestors were poor Russian peasants living near where what known as “The Gateway to Siberia”. This soup actually tastes good too.

Directions

Boil beetroot for 3/4 hour

Peel skin off

Grate

Add 1/2 grated onion and potato per person

Cook again

Add water & salt

Serve with unsweetened yoghurt and fresh bread
