Cheese and Bacon Muffins


1 1/2 cups flour

1 tbsp BP

1/8 tsp cayenne pepper (may be omitted)

1 cup tasty cheese

1/4 cup finely chopped bacon pieces

1 egg

1 cup milk

75 g butter


Sift flour, BP and pepper into a bowl. Stir in cheese and bacon. Beat egg
and milk. Melt butter and add to milk mixture. Make a well in the centre
of the flour mixture, and pour in the milk mixture. Stir quickly and just
enough to mix. Spoon batter into 9 deep muffin pans. Bake at 190C 15 - 20
mins. Serve warm.
