125 gm (4 oz) butter
1 cup (220g) 7 oz castor sugar
1 cup plain flour
1/2 cup SR flour
1/2 tsp soda bic
2 tsp cinnamon
Cream butter and 3/4 cup sugar in bowl
Add egg and beat again.
Sift flours and soda and stir in.
Turn dough onto floured board and knead briefly. Wrap in cling wrap and
refrigerate until firm.
Put cinnamon and remaining sugar in a small bowl and mix.
Roll dough into small balls and roll in mixture and place on a greased oven
tray. Bake for 8 minutes 180C until golden brown. Cool on wire racks.
